Disappointed in my last order

My last order (eight extra thick cut ribeyes - $378.00) was very disappointing. I cooked four of them, and of these four only one was actually 1.5 inches thick for the entire steak. They certainly all weighed 18 oz, but two were one inch or thinner, but very wide. One was 1.5 inches thick on the high side, but the cut tapered down such that it was less than ¾ inch on the low side (angled). Secondly, and more importantly, one of the four was too tough/gristly to eat. On two other steaks, my guests had to cut around and cut off a significant portion (over 30%) in order to have pleasurable (not having to chew for several minutes) bites. The portion of steaks which were edible/chewable were delicious; but this is too high of percentage of waste, for the high price of the cuts. I really have enjoyed ordering from you over the past few years, but this issue is becoming more frequent (both to inconsistent cut thickness and overall quality/tenderness). This issue was not present on my earliest orders, but has now become common. For the expense, this is not acceptable. I wrote an email to the administrator regarding these issues, but have not yet heard back. Doubtful I’ll be ordering again until these issues are resolved.

Awesome

I seasoned/s&p, seared my room temp 18oz ribeye in a cast iron skillet then placed in a preheated 350* oven for 10 min. I let it rest about 8 min while my potatoes O’Brian finished cooking. Resulting in a medium ribeye /w awesome flavor and tenderness. Thanks

Most items are individually vacuum sealed and placed in boxes before being added to a styrofoam cooler for shipping.
