NOTE FOR COOKING: These sausages are already fully cooked, so when you prepare them, it is just to heat them up. Because Elk is very lean, it is important to cook these low and slow. When they are cooked with too high of heat or too fast, the skin can get tough. Medium low heat is best! You can do this on the grill or the stove top, just take care with the heat!

  • Would like to know What type of casing is used for dogs & sausages

    There is no casing used on the hot dogs or bratwurst sausages. The only items that has a casing is our Bison Summer Sausage and our Bison Breakfast Sausage links. Those are collagen casings.

  • What is the best way to grill your spicy elk sausage? Should the heat be indirect or is there any preparation that needs to be done prior to grilling?

    Indirect heat would be good. They are already fully cooked, so it's really just about heating them thoroughly and getting the char you want, without getting them overdone. A slow, even heat will be good.
