Can the 12 oz ribeyes be cut in half (6 oz) prior to sealing? Would just be a better portion for me. Gerry
Unfortunately, we are not able to accommodate custom orders, so the ribeyes are all going to be 12 oz. Smaller steak sizes that we have available are: Filet Mignon (6 oz.), Flat Iron Steak (8 oz.)

What does Bison Steak Taste like?
Bison has a rich, clean and slightly sweet flavor. You'll notice a difference from your first bite! You'll notice that bison steaks have a deep red color -- and a lot less marbling! Our responsibly ranch raised philosophy and the freedom of our animals to graze and roam freely, ensures that tour meat is of superior quality which you will notice in taste and appearance.
What's the best way to cook Bison Steaks?
Bison steaks are very lean so you'll want to take care when cooking. Your favorite cooking method of other steaks (grilling, stove-top, etc.) should work just as well with bison, however you will likely want to lower the heat and adjust the cooking time.
We recommend not cooking bison steaks past medium doneness, leaving some pink. If you cook your steak too quickly or too well-done, it will become tough and chewy. As long as you cook it to medium doneness (or less), you will be left with an amazingly tender, delicious steak!
What's the best way to season a bison steak?
Your favorite seasoning blend will work great on our Bison Filet Mignon and Ribeye Steaks. However, we suggest using only a small amount of salt on our steaks. We offer a Bison Steak & Burger Seasoning blend which we had developed specifically to complement or bison as well. We also find that Garlic, Pepper and Rosemary makes a great seasoning blend for bison steaks.
How will this meat arrive?
We package our bison steaks individually and vacuum sealed. The Filet Mignon and Ribeye Steaks are each then placed in cartons of 4.
We will then place your carton of Bison Ribeyes & Bison Filets (as well as any other items you order) in a styrofoam cooler with dry ice to ensure that it stays frozen during shipping. Even if your meat does not arrive still completely frozen (although the majority of the time it does), as long as it arrives cold to the touch, it is completely safe to re-freeze and cook.
