We’re now offering a very limited run of Bison Skirt Steaks! These won’t always be available, but we’ll offer them while we can. This cut makes for extremely tender meat that is popular to use in dishes such as fajitas or stir fry!
Each package contains 2 Bison Skirt Steaks. Weights will vary, but should average about 3-4 lbs of meat per box.

Skirt steak is of good quality but amount received, barely 3 pounds certainly not a good value. Won’t buy this particular product again. First product from Nebraska Bison that has disappointed.

I have ordered a few times now and over all I've had a good experience. So I tried the skirt steak this time around and I am a little upset about the price per pound. It states average 31/2 - 5 pounds. 31/3 lb would of been an ok deal and 5 lb would of been better however when I threw my order on the scale and only read 3 lb I became some what disappointed in the value. I have yet to cook but I'm sure it will taste good. I have not been disappointed with the quality yet.

How will my meat ship?
Orders ship in styrofoam coolers with dry ice. Orders ship Mondays - Wednesdays (depending on your location) via FedEx. Click here for more information on our shipping policy.
How is the meat packaged?
Most items are individually vacuum sealed and placed in boxes before being added to a styrofoam cooler for shipping.
What does bison meat taste like?
Bison has a rich, clean and slightly sweet flavor. You'll notice a difference from your first bite! Bison has a deep red color -- and a lot less marbling, but remains incredibly tender!

How do I cook bison meat?
Bison meat is much leaner than most other meats, so it's important to take care while cooking.
We recommend cooking bison meat low and slow to ensure tender and flavorful meat.
When cooking bison steaks, we recommend not cooking past medium doneness.

What is the difference between bison and buffalo?
The American Bison is the proper name for the animal that early western settlers referred to as "buffalo".
However, because the word "buffalo" is so ingrained in our language and culture, it is generally considered acceptable to use "buffalo" and "bison" interchangeably in North America.
