Shredded Bison Taco Meat

Slow cooked bison roast recipe for tender and delicious bison taco meat.

2.5 lb. Bison Chuck Roast
1/3 cup white vinegar
3 garlic cloves
4 tsp. ground cumin
2 tsp. oregano
1 tsp. ground allspice
dash salt
dash pepper
3 chipotle chili peppers in adobo sauce
3/4 cup chicken stock

Place bison roast in a slow cooker. Blend remaining ingredients (except chicken stock) together in a blender, along with some excess adobe sauce until well blended. Pour over top of roast. Add chicken stock.

Cook over low heat for 11-12 hours until roast is so tender you can pull apart with a fork.


Shred the meat, by pulling apart with fingers or a fork. Serve with your favorite taco fixings.
