Porcupine Buffalo Meatballs
A great one-dish meal highlighting the great flavor of lean bison meat.
1 lb. Ground Buffalo Meat
small chopped onion
dash of Worcestershire sauce
1/2 - 1 cup Oats
1/8 cup ketchup
dash of mustard
salt and pepper, to taste
garlic, oregano, basil, to taste
1 - 2 cups cooked rice
Combine all ingredients except for tomato sauce, brown sugar and rice. Add half of cooked rice into meat mixture. Form into balls.
Line a baking dish with tomato sauce. Sprinkle with brown sugar. Sprinkle remaining rice on top. Place meatballs in pan and pour more sauce over meatballs. Cook at 350 F for approximately 1 1/2 - 2 hours.
