Bison Breakfast Burritos

A tasty breakfast recipe featuring bison, eggs and potatoes.


Ingredients:
1 lb. Ground Bison Meat
1 small onion, diced
1 potato, baked, peeled and chopped
NebraskaBison.com Steak & Burger Seasoning with Sea Salt
6 eggs, beaten
chopped cilantro to taste
warmed tortilla shells
chopped green onions (optional)
shredded cheese (optional)
salsa (optional)

Directions:
Season bison burger generously with NebraskaBison.com's Steak & Burger Seasoning. Brown and separate bison burger and onion over medium low heat until fully cooked. Drain excess grease and place back on stove top. Bake potato in microwave for 3-5 minutes until done. Potato should be soft. Once cooked, peel and cut into small, bite-size pieces. Add to ground bison skillet and mix together. Add eggs, and scramble into mixture. Once eggs are fully cooked, mix in chopped cilantro. Serve on warm flour tortillas with cheese, salsa, and chopped scallions as desired.
