Bison Breakfast Burritos
A tasty breakfast recipe featuring bison, eggs and potatoes.
1 lb. Ground Bison Breakfast Sausage
1 small onion, diced
1 potato, baked, peeled and chopped
7 eggs, beaten
chopped cilantro to taste
warmed tortilla shells
chopped green onions (optional)
shredded cheese (optional)
Brown and separate bison sausage and onion over medium low heat until fully cooked. Drain excess grease and place back on stove top.
Bake potato in microwave for 4-7 minutes until done. Potato should be soft. Once cooked, peel and cut into small, bite-size pieces. Add to bison skillet and mix together. Add eggs, and scramble into mixture.
Once eggs are fully cooked, mix in chopped cilantro. Serve on warm flour tortillas with cheese, salsa, and chopped scallions as desired.
