Baked Bison Egg Bites

Skip the starbucks line for these baked bison egg bites. Twice the protein but that same texture and taste as your favorite starbucks egg bites.


Bison Breakfast Sausage

9 large eggs

•1 cup cottage cheese

•1 cup cheddar cheese, divided

•1 tsp black pepper

•1/2 tsp salt

•1 cup spinach, chopped

Cooking Instructions:

Preheat your your oven to 300F and prepare a muffin tray with non-stick spray. Add eggs, cottage cheese, half of the cheddar cheese, and salt and pepper to a blender. Blend until everything is smooth and well-combined.

In a medium skillet add your ground breakfast sausage and cook until lightly browned.

Pour the egg mixture evenly into the prepared muffin tray, filling each slot about half way (the egg bites will rise in the oven). 

Divide your spinach and sausage evenly over the egg mixture in the muffin tray. Then sprinkle the remaining cheddar cheese over each.

Sprinkle with more salt and pepper (optional), then place the muffin tray in the oven and bake for 30 minutes at 300F. Remove from the oven and let cool slightly before removing from muffin tray.
