Italian Pasta with Bison and Veggies

This light and tasty pasta dish will seemingly transport you to Italy. Enjoy the rich flavor of our lean ground bison combined with an al dente pasta and seasonings for a meal you can come back to again and again.

Ingredients:

• 12 oz pasta, cooked until al dente*

• 1 lb Ground Bison

• 3 cups Broccoli Florets, lightly chopped

• 1/2 cup Parsley Leaves, chopped

• 1/4 cup Parmesan Cheese

• 1 lemon, zested and juiced

• 1 tsp Salt

• 1 tsp pepper

Bison Seasonings:

• 2 tsp Dried Parsley

• 2 tsp Italian Seasoning

• 1 1/2 tsp Black Pepper

• 1/2 tsp Fennel Seed

• 1/2 tsp Paprika

• 1 tsp Red Pepper Flakes

• 2 tsp Salt

• 1 Tbsp Minced Garlic

Cooking Instructions:

Mix the raw ground bison with the seasonings. Brown the spiced bison in a large skillet, breaking it up with a wooden spoon, until no longer pink.

Remove the cooked bison from the pan and set aside. Add the chopped broccoli (and any other vegetables of your choosing!) and a pinch of salt to the skillet and cook over medium-high heat for about 3 minutes, until the color starts to get bright.

Add the bison back into the skillet, along with lemon zest.

Add the al dente pasta into the skillet along with the vegetables and bison.

Add about a cup of pasta water to the skillet or alternatively add 1 cup of warm tap water.

Let it simmer a minute or so more, then turn off the heat and add the parmesan cheese.

Stir in the parsley and serve immediately with another sprinkle of parmesan on top!

Recipe Notes:

For the pasta, we used orecchiette, penne would also work great for this recipe.
