Firecracker Bison Bites

Serves: 4 • Cooking Time: 20 Minutes

Firecracker bison bites are a deliciously spicy protein packed lunch or snack. They have a fiery bite with a hint of sweet and tangy. Tastes amazing in a simple butter lettuce wrap or on some rice.

Ingredients:

• 4 Bison Top Sirloin

•½ cup hot sauce Franks, Sriracha, or other

•¾ cup light brown sugar

•1 Tablespoon soy sauce

•2 Tablespoons apple cider vinegar

•½ teaspoon garlic powder

•½ teaspoon salt

•1 teaspoon red pepper flakes

Cooking Instructions:

In a small saucepan, combine the hot sauce, brown sugar, soy sauce, vinegar, garlic powder, and salt.

Cook over medium heat, stirring often, until sauce thickens and gets sticky.

The sauce will thicken more as it cools, so don’t over thicken. If sauce gets too thick, add a teaspoon of water at a time till the right consistency.

While your sauce is cooking, Preheat your airfryer to 400 degrees. Grab 4 bison top sirloin steaks and cut into medium size chunks. (You can also use a chuck roast)

Once your airfyer is preheated add your steak bites and drizzle oil of your choice over them. Cook for 5 minutes - 8 minutes.

Add the red pepper flakes when sauce has thickened and stir in to combine.

Pour your sauce over the steak bites until fully coated. Let cool and serve in a wrap, on rice, or eat them as is!

Recipe Notes:

Bison contains less fat and cooking time should be based on internal temperature. If you are unfamiliar with smoking bison be sure to cook low and slow.
