Bison Burger with Spinach & Chipotle Mayo

A tasty bison cheeseburger with an easy chipotle mayo and spinach leaves.


Ingredients:
1 lb. Ground Bison Burger
1/8 cup green onion, thinly sliced
Garlic Powder, to taste
Seasoning Salt, to taste
Black pepper, to taste
Worcestershire sauce, to taste
1/3 cup Mayonnaise
1 - 2  tsp. chipotle peppers in adobo sauce
olive oil
cheddar cheese
spinach leaves
extra virgin olive oil
buns

Directions:
Place the ground bison in a bowl with green onion, garlic powder, seasoning salt, Worcestershire sauce and pepper. Mix to combine. Divide bison into two 1/2 lb. portions. Shape into burger patty.

Remove the seeds from 1-2 chipotle peppers and mince. Mix peppers in with mayo until it reaches your desired taste.

Place olive oil in a large pan over medium heat on the stove. When hot, place burger patties onto pan. Cook 3-4 minutes. 

Flip the burgers and cook an additional 2 minutes. Place a slice of cheese on each patty, cover the pan and cook an additional 2 minutes until cheese begins to melt.

Toast the buns in your oven or in the same pan as the burgers cook.

Spread chipotle mayo on top and bottom of each bun. Place spinach leaves on bottom bun and place patty on top.

•1 Large Avocado

•1/4 cup Cilantro

•1 Clove Garlic

•2 tsp Lime Juice

•1 tsp Salt & Pepper (to taste)

•1/4 cup Plain Greek Yogurt

Directions: Combine all ingredients and spread on burger.

Peach Heat Chutney

• 2lbs Fresh Peaches

•1 medium red onion

• 1 green or red apple

• 1/4 tsp ground ginger

•1 tsp grated fresh ginger

•1 tsp ground cinnamon

• 7 cardamom pods, ground

•1/4 tsp ground turmeric

•1/4 tsp aniseed

•1 tsp coriander seeds

•1 tsp black pepper

•1 small dried whole red chile

•1 cup brown sugar

•1 cup light brown sugar

Directions: Combine all ingredients in large sauce pan. Cook over low heat until peaches are soft and sauce is boiling. Remove from heat and let cool.

Coffee Dry Rub

•1 1/2 Tbsp ground coffee

•1/2 Tbsp salt

•1/2 Tbsp paprika

•1/2 Tbsp brown sugar

•1/2 Tbsp Pepper

•1/2 Tbsp Onion Powder

•1/2 Tbsp garlic powder

•1/4 Tbsp ground coriander

Directions: Combine all ingredients and rub onto all sides of burger.

Buffalo Hot Sauce

•2/3 cup hot pepper sauce (Franks RedHot)

•1/2 cup unsalted butter

•1 1/2 tbsp white vinegar

•1/4 tsp Worcestershire sauce

•1/4 tsp cayenne pepper

•1/8 tsp garlic powder

• salt to taste

Directions: Combine all ingredients and drizzle onto burger.
