Dry Rub for Smoked Bison Back Ribs

Serves: 4 - 6 • Cooking Time: 4.5 hours

Use these instructions for a tasty and tender rack (or two!) of Bison Back Ribs!

Ingredients:

• 2 Tbsp Kosher Salt

• 2 Tbsp Brown Sugar

• 2 Tbsp Smoked Paprika

• 2 Tbsp Onion Powder

• 2 Tbsp Garlic Powder

• 1 Tbsp Cracked Black Pepper

• 1/2 tsp Chipotle Powder

• 1/2 tsp Ancho Chile Powder

• 1/4 tsp Ground Cumin

• 1/4 tsp Cinnamon

2 Racks Bison Back Ribs

• 1/4 tsp Yellow Mustard

Cooking Instructions:

Prepare the smoker or grill for indirect cooking, add a few chunks of your favorite smoking wood to coal if that is the cooking method being used, and get temperature to 250*F.

Combine all seasonings in a small bowl and blend well.

Remove membrane from the bone side of the ribs, rub the ribs with the mustard, then season both sides of ribs with the dry rub mixture.

Place ribs on the smoker or grill. Cover and allow ribs to smoke approximately 4 hours, or until tender.

Slow cooking these Bison Back Ribs and keeping your cooking temperature consistent is very important to keep your meat tender and delicious! When cooked well, these should be some of the best ribs of your life!
