
Dry Rub for Bison Back Ribs

Ingredients:
2 Tablespoons Kosher Salt
2 Tablespoons Brown Sugar
2 Tablespoons Smoked Paprika
2 Tablespoons Onion Powder
2 Tablespoons Garlic Powder
1 Tablespoon Cracked Black Pepper
½ Teaspoon Chipotle Powder
½ Teaspoon Ancho Chile Powder
¼ Teaspoon Ground Cumin
¼ Teaspoon Cinnamon
2 Racks Bison Back Ribs
¼ Teaspoon Yellow Mustard
Directions:
Prepare the smoker or grill for indirect cooking, add a few chunks of your favorite smoking wood to coal if that is the cooking method being used, and get temperature to 250° F.
Combine all seasonings in a small bowl and blend well. Remove membrane from the bone side of the ribs, rub the ribs with the mustard, then season both sides of ribs with the dry rub mixture. Place ribs on the smoker or grill. Cover and allow ribs to smoke approximately 4 hours, or until tender.
