Ingredients:

  • 3 lbs bone-in bison short ribs

  • 2 tablespoons olive oil

  • 1 large onion, chopped

  • 2 carrots, peeled and sliced

  • 2 celery stalks, chopped

  • 4 cloves garlic, minced

  • 2 cups apple cider

  • 1 cup beef broth

  • 2 tablespoons tomato paste

  • 2 sprigs fresh thyme

  • 2 bay leaves

  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Preheat oven to 325°F (163°C). Season short ribs generously with salt and pepper.

  2. Heat olive oil in a large Dutch oven over medium-high heat. Sear short ribs on all sides until browned, about 8 minutes. Transfer to a plate.

  3. Add onion, carrots, and celery to the pot. Cook, stirring, until softened, about 5 minutes. Add garlic and tomato paste; cook for 1 minute more.

  4. Pour in apple cider and beef broth, scraping up any browned bits. Return short ribs to the pot. Add thyme and bay leaves.

  5. Cover and transfer to the oven. Braise for 3 hours, or until the meat is very tender and falling off the bone.

  6. Remove short ribs and strain sauce if desired. Serve ribs with sauce spooned over the top.
