Bison Apple Cider Short Ribs
Prep Time: 20–25 minutes
Cook Time: 3 hours 30 minutes

Ingredients:
-
3 lbs bone-in bison short ribs
-
2 tablespoons olive oil
-
1 large onion, chopped
-
2 carrots, peeled and sliced
-
2 celery stalks, chopped
-
4 cloves garlic, minced
-
2 cups apple cider
-
1 cup beef broth
-
2 tablespoons tomato paste
-
2 sprigs fresh thyme
-
2 bay leaves
-
Salt and freshly ground black pepper, to taste

Instructions:
-
Preheat oven to 325°F (163°C). Season short ribs generously with salt and pepper.
-
Heat olive oil in a large Dutch oven over medium-high heat. Sear short ribs on all sides until browned, about 8 minutes. Transfer to a plate.
-
Add onion, carrots, and celery to the pot. Cook, stirring, until softened, about 5 minutes. Add garlic and tomato paste; cook for 1 minute more.
-
Pour in apple cider and beef broth, scraping up any browned bits. Return short ribs to the pot. Add thyme and bay leaves.
-
Cover and transfer to the oven. Braise for 3 hours, or until the meat is very tender and falling off the bone.
-
Remove short ribs and strain sauce if desired. Serve ribs with sauce spooned over the top.
