Asian Bison Burger

Asian Bison Burger
A unique spin on the bison burger inspired by Asian fusion and created during our 31 Days of Bison promotion.
Ingredients:
1 lb. Ground Bison
1/4 cup chopped green onion
1 tsp. fresh grated ginger
dash soy sauce
salt
white pepper
black pepper
1 tsp. hoisin sauce
1/2 tsp. minced garlic
Hot Mustard Sauce:
1/4 cup dry mustard
1/4 cup water
mayo, to taste
hoisin sauce, to taste
Asian Slaw
1 bag coleslaw mix
1 bunch green onions, chopped
1 red onion, sliced
1/3 cup soy sauce
1/4 cup lemon juice
1/4 cup vegetable oil
2 tbsp. fresh grated ginger
2 tbsp. vinegar
2 tbsp. brown sugar
2 tsp. sesame oil
2 tsp. sesame seeds
1 tsp. salt
1/2 tsp. white pepper
1/4 tsp. dry mustard
Directions:
Toss coleslaw mix with onion and green onion. Mix remaining ingredients in a small bowl and mix together.
Mix dry mustard with water. Add mayo and hoisin sauce until sauce reaches desired taste.
Mix all burger patty ingredients and form into 2 or 3 patties. Pour a small amount of sesame oil into a frying pan and heat to medium. Add burger patties and cook for approximately 5 minutes on each side, until patties reach medium doneness.
Place spinach and onion on hamburger bun. Add patty and hot mustard sauce.
Pour the asian slaw dressing over coleslaw mixture. Serve with patties.

Avocado Lime Aoili
•1 Large Avocado
•1/4 cup Cilantro
•1 Clove Garlic
•2 tsp Lime Juice
•1 tsp Salt & Pepper (to taste)
•1/4 cup Plain Greek Yogurt
Directions: Combine all ingredients and spread on burger.
Peach Heat Chutney
• 2lbs Fresh Peaches
•1 medium red onion
• 1 green or red apple
• 1/4 tsp ground ginger
•1 tsp grated fresh ginger
•1 tsp ground cinnamon
• 7 cardamom pods, ground
•1/4 tsp ground turmeric
•1/4 tsp aniseed
•1 tsp coriander seeds
•1 tsp black pepper
•1 small dried whole red chile
•1 cup brown sugar
•1 cup light brown sugar
Directions: Combine all ingredients in large sauce pan. Cook over low heat until peaches are soft and sauce is boiling. Remove from heat and let cool.
Coffee Dry Rub
•1 1/2 Tbsp ground coffee
•1/2 Tbsp salt
•1/2 Tbsp paprika
•1/2 Tbsp brown sugar
•1/2 Tbsp Pepper
•1/2 Tbsp Onion Powder
•1/2 Tbsp garlic powder
•1/4 Tbsp ground coriander
Directions: Combine all ingredients and rub onto all sides of burger.
Buffalo Hot Sauce
•2/3 cup hot pepper sauce (Franks RedHot)
•1/2 cup unsalted butter
•1 1/2 tbsp white vinegar
•1/4 tsp Worcestershire sauce
•1/4 tsp cayenne pepper
•1/8 tsp garlic powder
• salt to taste
Directions: Combine all ingredients and drizzle onto burger.
