Perfect Prime Rib

I marinated this Prime Rib on Thursday and I put it on the charcoal grill on the next Tuesday. 5 day marinade. Puf it on the grill and I took it off when it was done. I like my meat medium well. It was so good and tender. Marinade : McCormick's Burbon and Brown Sugar, 1/4 cup Olive oil, 1/4 cup Apple Cider Vinegar, 1/2 cup whiskey. Mix and soak meat for as long as you want. I do it no less than 72 hours.

Delicious and family favorite

I cooked this on my big green egg for my husband's birthday. The meat was amazing and a delicious special meal. My only negative, however, is that it was so delicious that everyone asks me to make it for every occasion- but this is not Nebraska bison's fault but a testament to how wonderful their meats are. I now have to order more for xmas, New Years, Valentine's Day, Arbor Day.....

Cooking instructions flawed

First let me say that the meat was not a disappointment. It was tender and flavorful. Not let's talk about why I gave one star. The instructions said to cook at 375 for 0ne hour. turn off oven for 4-5 hours, then cook at 350 for 45-1 hour. Firstly I must mention my oven ALWAYS runs 5-10 degrees low. I started approximately 7 hours before planned time to dine. I was shooting for rare to medium rare (125-135 internal). After about 45 minutes I noticed the rib was already up to 105. I realized it was cooking a lot faster than I was lead to believe. I turned OFF the oven and within another 1 hr. it was 130 degrees. This was about 5 hours until planned dining time. I pulled out of the oven, plated, covered with foil and put in my warming drawer. I waited until it dropped to 120 and then turned on the drawer to maintain that temp until time to eat. When I did carver it was perfect. If I had followed the instructions it would have been WELL done. Someone needs to review the recommended procedure and amend so a $150 cut of meat isn't ruined.

What is the difference between bison and buffalo?

The American Bison is the proper name for the animal that early western settlers referred to as "buffalo".
