Ingredients

Breakfast Sausage Ingredients:
Bison, Water, Seasoning (salt, spices, dextrose), Corn Starch, Celery Powder (celery powder, sea salt). Links are made with a collagen casing.

Cooking Instructions

Note: You may notice more grease in your pan when cooking bison breakfast sausage compared to pork sausage. But when you compare the nutrition labels, bison breakfast sausage has less fat. The reason for the extra grease in your pan is due to the different way the fat runs throughout the two types of meat. Typical pork sausage is made from 72% lean pork, while our Bison sausage is made from 80% lean bison. That would lead you to expect less fat run off with the bison. But with pork, there’s a considerable amount of fat saturated throughout the muscle. With bison, the actual solid meat areas are extremely lean. So to achieve a desirable lean / fat for sausage, we depend on the fat in the bison trim. Because the fat isn’t as “bonded” with the meat as it is with pork, you get a lot of run off during cooking.

My favorite sausage

It's safely in the freezer except for one package of the link sausages that I pre-cooked and froze so that I can microwave a couple at a time. I love both the links and the ground sausage so I purchased 4lbs of each. I haven't purchased any other breakfast sausage since I discovered Nebraska Bison.

Love it!

Sausage is great. We add spicy Red Pepper Flakes or Slap Yo Mama to it to make it a spicy sausage mix. It's perfect then.

What does bison meat taste like?

Bison has a rich, clean and slightly sweet flavor. You'll notice a difference from your first bite! Bison steaks have a deep red color -- and a lot less marbling, but remain incredible tender!

What casings are used in the bison sausages?

Our Bison Hot Dogs, and Brats do not have any casing.

Our Bison Summer Sausage and Bison Breakfast Sausage links use a collagen casing.

How do I cook bison sausages?

Most of our Bison Sausage options are fully cooked, including Bison Hot Dogs, Bison Bratwurst, Bison Italian Sausage. Cooking these is more about heating them up to your liking. They are great on the great on the grill and on the stove top.

The Bison Breakfast Sausage is raw and will need to be fully cooked before serving.

The Bison Summer Sausage is fully cooked and does not require any heating or cooking before serving. Remove the casing, slice and serve.

No added Nitrates or Nitrites.
