The Bison Ribeye will contain more marbling than any other bison steak we have available – which in trade off, makes for a greatly tender cut of bison. The NY Strip has very little marbling, while it contains most of its fat in a strip along the edge.

What does Bison Steak Taste like?
Bison has a rich, clean and slightly sweet flavor. You'll notice a difference from your first bite! You'll notice that bison steaks have a deep red color -- and a lot less marbling! Our responsibly ranch raised philosophy and the freedom of our animals to graze and roam freely, ensures that our meat is of superior quality which you will notice in taste and appearance.
What's the best way to season a bison steak?
Your favorite seasoning blend will work great on our bison steaks. However, we suggest using only a small amount of salt. We offer a Bison Steak & Burger Seasoning blend which we had developed specifically to complement our bison as well. We also find that Garlic, Pepper and Rosemary makes a great seasoning blend for bison steaks.
How should I cook Bison Steak?
Bison steaks are very lean so you'll want to take care when cooking. Your favorite cooking method of other steaks (grilling, stove-top, etc.) should work just as well with bison, however you will likely want to lower the heat and adjust the cooking time.
We recommend not cooking bison steaks past medium doneness, leaving some pink. If you cook your steak too quickly or too well-done, it will become tough and chewy. As long as you cook it to medium doneness (or less), you will be left with an amazingly tender, delicious steak!
If Bison Steaks contain so little marbling, how are they so tender?
Bison meat is unique to other meat options, in that bison are incredibly strong animals. Their meat is so lean because healthy bison are made up of so much muscle, which is why bison meat can still be so tender without being fatty.
How will this meat arrive?
We package our bison steaks individually and vacuum sealed. The Bison Ribeye Steaks & Bison NY Strips are then each placed in cartons of 4.
We will then place your cartons of steaks (and any other items you may order) in a styrofoam cooler with dry ice to ensure that it stays frozen and cold during shipping. Even if your meat does not arrive still completely frozen (although most of the time it will), as long as it arrive cold to the touch, it is completely safe to re-freeze and cook.
