Bison NY Strip Steaks with Red Wine Shallot Sauce

Follow this recipe for a deliciously juicy bison steak.

Bison NY Strip Steaks
1 cup red wine
5 shallots, peeled & quartered
4 whole garlic cloves, peeled
4 tbsp. butter
pinch brown sugar
salt & pepper

Place 2 tbsp. butter in a frying pan over medium/medium high heat. Add shallots and garlic. Melt butter and cook for 2 minutes. Place pan in 375* oven and cook for 25 minutes.

Remove from oven. Add remaining 2 tbsp. of butter, red wine, rosemary (to taste) and brown sugar. Place back over medium high heat and cook for another 6 minutes, until thickened.

While sauce is in the oven, season steaks with salt and pepper. Place on pre-heated grill (medium heat). Cook steaks on both sides until they reach medium doneness. Place sauce over steaks and serve.
