Bison Kabobs with Stew Meat

This recipe from our 31 Days of Bison promotion uses our pre-cut bison meat to make tasty meat and vegetable kabobs. Other bison cuts, such as steak, will work great as well.

1 lb. Bison Stew Meat (or bison steak / roast, cut into pieces)
2 green peppers, cut into pieces
2 yellow bell peppers, cut into pieces
1 red onion, cut into pieces
grape tomatos

3/4 cup orange juice
1/4 cup soy sauce
1 1/2 tsp. cumin
1 tsp. minced garlic
salt & pepper, to taste
dash of ginger
2 tsp. rosemary

Mix all marinade ingredients in a medium bowl with a lid. Add stew meat, cover bowl and shake to coat. Refrigerate for a minimum of 4 hours.

Place peppers, onions, meat and tomatoes on skewers, alternating between them. Place on grill heated over medium heat and cook for about 3-4 minutes on each side until meat is cooked.
