Bison Steak & Black Bean Chili

Serves: 4 • Cooking Time: 1.5+ hours

This hearty bison chili is a great way to use up extra meat from roasts, and steaks. Make it your own by adding some fresh garden veggies as well.

The rich taste of bison will really shine through in this ultimate comfort food classic!

Ingredients:

• 1 lb Bison Steak of choice, pre-cooked and diced

• 1 can of Diced Tomatoes

• 1 can of Black Beans

• 1 can of Crushed Tomatoes

• 1 Tbsp. of Ground Cumin

• 1 Tbsp. Chili Powder

• 1 tsp Onion Powder

• 1 tsp Garlic Powder

• 2 tsp Salt

• 1 tsp Pepper

• Pinch of Sugar

• 1 small Onion, chopped

• 1 cup of Water

• 1 Red Bell Pepper (optional)

Cooking Instructions:

In a large pot or dutch oven, cook the onion over medium heat to soften and slightly brown. Add diced, pre-cooked steak.

Add the spices and stir to ‘bloom’ the flavor for 2-3 minutes. Stir in peppers, beans, and canned tomatoes.

Cover and let simmer for 10-15 minutes. (At this point you may pour the mixture in a crockpot, Instant Pot, or leave it in the dutch oven - depending on your timeframe/preference.)

Add canned beans, water and whatever fresh veggies you desire (corn is great in this dish!). Cook on low for at least 1 hour on the stove-top (the longer the better!) or follow the directions for your crockpot or Instant Pot for cooking times for chili.

Top with your favorites like sour cream, cheese, lime, and jalepenos.

Recipe Notes:

This will work great with any steak, but it's even better when using it with leftovers. Our Whole Bison Tenderloin is perfect in this recipe!
