Preheat the oven and prepare the roast:

Preheat your oven to 325°F (163°C) for a slow and even cook.

Take your bison prime rib roast out of the refrigerator and let it sit at room temperature for about 30 minutes to ensure even cooking.

Season the roast generously with your preferred blend of herbs, spices, and seasoning rub. Make sure to coat the entire surface of the roast for maximum flavor.

Roast the bison prime rib:

Place the seasoned bison prime rib roast on a roasting rack in a roasting pan, bone-side down.

Insert a meat thermometer into the thickest part of the roast, making sure it doesn't touch the bone.

Roast the bison prime rib in the preheated oven for approximately 15 minutes per pound (450g) for medium-rare doneness. For example, if you have a 5-pound roast, roast it for about 75 minutes.

Check the internal temperature of the roast about 30 minutes before the estimated cooking time. For medium-rare, the internal temperature should reach around 135°F (57°C). For medium, aim for 145°F (63°C).

Rest and carve the roast:

Once the bison prime rib roast reaches your desired level of doneness, remove it from the oven and transfer it to a cutting board.

Tent the roast loosely with aluminum foil and let it rest for at least 15-20 minutes. This resting period allows the juices to redistribute throughout the meat, ensuring juiciness and tenderness.

After resting, carve the roast against the grain into thick slices and serve immediately with your favorite sides and sauces.
