Honey Balsamic Ribs

Serves: 4 • Cooking time: 3 hours

Sweet and spicy slow cooked ribs with a tangy balsamic and honey glaze.

Ingredients:

1 Rack of Bison Ribs

For the Rub

  • Coarse salt and freshly ground black pepper, to taste
  • Cayenne Pepper

For the Honey Balsamic Glaze

  • 2/4 cup (60ml) balsamic vinegar
  • 2/4 cup (60ml) chicken stock
  • 8 tablespoons honey
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon Italian seasoning (or dried oregano, basil, and thyme)
  • Coarse salt and freshly ground black pepper, to taste

Cooking Instructions:

1. Take your bison ribs and start by removing the membrane.

2. Generously season your ribs on both sides with salt, pepper, and cayenne pepper. If you are not a fan of the heat, you can skip cayenne pepper or only apply a small amount.

3. Prepare your glaze. Mix all ingredients together and taste. Add more salt or pepper if needed.

4.. Depending on the size of your slow cooker / instant pot you may need to cut your ribs in half. Place one half on the bottom of the slow cooker.

5. Pour about half of your glaze over your first half of ribs. Add your other rib section and pour the remaining glaze over the ribs.

6. Turn your slow cooker to high for 3 hours, or cook on low for 6 hours. If you cook on low, be sure to check on them occasionally to ensure they are not being overcooked.

7. Remove from slow cooker and serve! Spoon out any remaining glaze and top ribs for more flavor!
